Christmas Cookie Recipe Party

HOMEMADE OREO COOKIES

i brought these home from a cookie swap years ago, last year while looking at blogs i found the recipe on the buzzings of a queen bee my husband and the kids loved them.



For the chocolate wafers
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking power
1/4 teaspoon salt
1 1/4 cups sugar
1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperture, unsalted butter
1 large egg

For the filling
1/4 cup (1/2 stick) unsalted butter, soften
1/4 cup vegetable shortening
2 cups sifted powdered sugar
2 teaspoons vanilla extract

preheat oven 375 degrees

  1. in large bowl mix flour, cocoa powder, baking soda, baking powder, salt, and sugar. add butter, and then the egg.
  2. take rounded teaspoons of batter and place on a parchment paper-lined baking sheet 2 inches apart. slightly flatten the dough. bake for 9 minutes place on rack to cool.
  3. to make the filling, cream butter and shortening in mixing bowl on low speed, gradually beat in powdered sugar and vanilla. then mix on high for 2-3 minutes until filling is light and fluffy.
  4. spread the cream onto the flat part of one cookie. place another cookie on top. pour yourself a tall glass of cold milk and enjoy!
