HOMEMADE OREO COOKIES
i brought these home from a cookie swap years ago, last year while looking at blogs i found the recipe on the buzzings of a queen bee my husband and the kids loved them.
For the chocolate wafers
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking power
1/4 teaspoon salt
1 1/4 cups sugar
1/2 cup plus 2 tablespoons (1 1/4 sticks) room-temperture, unsalted butter
1 large egg

For the filling
1/4 cup (1/2 stick) unsalted butter, soften
1/4 cup vegetable shortening
2 cups sifted powdered sugar
2 teaspoons vanilla extract
preheat oven 375 degrees

- in large bowl mix flour, cocoa powder, baking soda, baking powder, salt, and sugar. add butter, and then the egg.
- take rounded teaspoons of batter and place on a parchment paper-lined baking sheet 2 inches apart. slightly flatten the dough. bake for 9 minutes place on rack to cool.
- to make the filling, cream butter and shortening in mixing bowl on low speed, gradually beat in powdered sugar and vanilla. then mix on high for 2-3 minutes until filling is light and fluffy.
- spread the cream onto the flat part of one cookie. place another cookie on top. pour yourself a tall glass of cold milk and enjoy!
